Farmer’s Market Pan Roasted Brussels Sprouts

Tuesday, January 27, 2015

Eating healthy does not have to be boring. There are so many ways to jazz up your veggies and turn them into delicious, must-have dishes. Brussels sprouts, for example, can turn into the main attraction on any dining table if cooked the right way.

“You can have a Brussels sprout salad…or you can bake them with sweet potatoes,” recommended Gretchen Sterling of the Pasadena Farmers’ Market.

“You put it on a mandolin and cut them like chips, and then you stick them in the oven in a casserole pan and sometimes even add a little bit of like crushed pineapple and juice and bacon, then put a little bit of cinnamon. Oh my gosh, it’s good.”

Pan roasting is another way to make Brussels sprouts sing. Using fresh ingredients from the Pasadena Farmers’ Market, you can create this dish and share it with your family.

Gretchen shares with Pasadena Now one of her favorite ways to make Brussel sprouts:

Ingredients
1 pound Brussels sprouts
3 tablespoons olive oil
1/2 teaspoon coarse salt
Freshly ground black pepper
Optional sweet and sour glaze: 1/2 tablespoon balsamic vinegar and 1 teaspoon honey

Trim the stem end off the sprouts and discard. Then, cut each sprout in half lengthwise.

Heat olive oil in a large cast-iron skillet, then add the Brussels sprouts 30 seconds or a minute after the oil starts to shimmer.

Cook for about three minutes, then toss until sprouts are tender and blackened in places.

Season with salt and pepper, and glaze your sprouts with vinegar and honey if you’re keen.

Enjoy! Be sure to send us a picture if you make this recipe– we want to see how this delicious dish turns out!
